Pecorino Mousse

A quick and tasty recipe, to whet your appetite!

The Aperirecipe of La Pettegola is here to help you: today we will explain how to pull out a respectable Pecorino Mousse, to taste with a slice of lard on warm Tuscan bread.


Ingredients

  • 150 g pecorino romano
  • 250 ml milk
  • 300 ml fresh cream
  • Mint leaves to taste
  • Banfi extra virgin olive oil
  • 4 slices Tuscan bread
  • 4 slices Colonnata lard
  • Salvia to taste
  • Thyme to taste
  • Rosemary to taste
  • Pepper to taste
  • 6 radishes

Method

Here’s the process. First, wash the radishes and dice them. Blanch by soaking in lightly salted water, then drain and put in ice water. Dry well with a towel.
At this point, bring the milk to a boil, then allow to cool, add the grated pecorino cheese stirring well, and allow to cool. So far so good? Then, whip the cream and incorporate little by little into the cold mixture. Season with pepper and set aside for 10 minutes in the fridge.
Finally, the last touch. Season the radishes with oil and minced mint, then place on the dish and spread the pecorino cheese cream over the radishes. Finally, lay on a slice of toasted Tuscan bread with lard sprinkled with chopped herbs on top. Et voilà! Your delicious snack is ready to tempt your friends’ tastebuds!
